5、 a list of technically and conceptually brilliant signatures and looking for an exit.T is magazine is a tribute to those sof landings,the safe bets,the cocktails that have passed their oral exams millions of times over.How we def ne a classic is something we explored last year in this magazine,so th
6、is time we have switched emphasis to ask how classics are created.If indeed they can be the philosophers among us might have it that cocktails are created,classics are evolutionary.Regardless,I spoke to Sam Ross of Penicillin and Paper Plane-fame;Audrey Saunders,inventor of T e Old Cuban and Gin-Gin
7、 Mule;Salvatore Calabrese,who f rst made the Breakfast Martini;and the Gin Basil Smashs Jrg Meyer about their drinks origin stories.T en were into the headline billing:the list of the bestselling classics at the worlds best bars,which is collated following the data from a poll of bars in late 2023(m
8、ore on this in How We Did It).Here our trusty cocktail scribe Clinton Cawood comes with the most convincing yarns and the best modern recipe interpretations from the 50 most popular classics.Its the tenth year weve asked bartenders about their bestselling classics,so were starting to see some long-t
9、erm trends emerge,something I delve into in my analysis.Its not just about which classics are in or out,its the style of drink and the constituent ingredients all are subject to trends.And to close the book,we look at the slow-moving but no-less-revealing bestselling spirits categories in the worlds

13、ocktails and their bestselling spirits.Representing the worlds best bars is a 100-strong pool of venues that have appeared in recent editions of the Worlds 50 Best Bars(1-100),Tales of the Cocktails Spirited Awards,Top 500 Bars,plus regional awards such as North America and Asias 50 Best Bars and th
14、e Mixology Bar Awards(which cater to the German-speaking world);and countrywide awards:the Class Bar Awards,Australian Bartender Awards and the Time Out Awards from various markets around the world.So,the panel rotates each year as it tracks to the performance of bars in these awards.Where we have a
15、 few gaps in our coverage,we apply a little f ller:5%of those invited to take part were editors picks bars of high regard in regions less represented by awards.HOW WE DID ITTHE BARST e 100 bars taking part in the survey were drawn from 38 countries.As youd expect,markets with a high concentration of
16、 top-end bars are represented accordingly.Europe,with strong bar scenes across many developed drinks markets,made up 37%of the sample.Fif een countries in Europe contributed bars,led by Italy,the UK,Greece and Portugal.By way of example,50 Best 2023 bars the Cambridge Public House,Line,Salmon Guru a
17、nd Himkok all took part.T e North American contingent shrank to 18%this year with the US continuing to lead the charge and the likes of T e Dead Rabbit,Mace and Double Chicken Please being selected,along with signif cant contributions from Mexico and Canada.Asia made up 17%of the sample of the world
18、s best bars from eight countries.China was the biggest contributor with the likes of Coa and Quinary in Hong Kong and Hope&Sesame of Guangzhou making the cut.Singapores Jigger&Pony and Bangkoks Tropic City also featured for Asia.T e biggest growth in representation comes from South America,which has
19、 more than doubled on last year to take 17%of the panel from seven countries.Argentina and Peru were the biggest contributors with the likes of Tres Monos and Carnaval lending their voices.Bars from Africa&the Middle East included 6%from South Africa,Lebanon and the UAE,while Australasia represented
20、 5%.THE SURVEYFor the Bestselling Classic Cocktails list we ask bars to name their top 10(which bars rank,and to which we add an appropriate weighting)from an extensive list of established mixed drinks.As we discuss in this supplement,the list of cocktails you might consider classics is hard to def
21、ne,so we select those that appear most frequently on menus,on online lists and in books.Each year we add to this list,as old recipes are exhumed and aired and newer recipes become considered neo-classics.We also provide the option for bartenders to add a classic not from the list.Essentially,if enou

24、lassic,but everyone else can.Its only through a cocktails multiplication outside of the creators orbit that it transforms from the little-known to the known.And,for an even more privileged circle,its maker too.Just think about how many bartenders there have been versus the number of cocktails consid
25、ered classics were probably talking a million-to-one shot.But by establishing the right conditions,you can narrow the odds.Drinks International spoke to some of those who have done just that created a great-tasting drink and harnessed the winds for f ight.INSPIRATION AND STORYSo f rst,the creation.“
26、Most classics have been made in the spare of the moment,or for an event there is normally a moment of inspiration,”says Salvatore Calabrese,creator of the Breakfast Martini back in 1996.His inspiration came one morning at the breakfast table,a jar of marmalade making its way from his home to the Lib
27、rary Bar at T e Lanesborough that day,on to the menu and now into history.Inspiration is so of en under the bartenders nose.“T e Sidecar at Harrys New York Bar in Paris,as the story goes,was created in an instant for a patron who arrived in a motorcycle sidecar,”says Calabrese.T e same is true of Di
28、ck Bradsells Espresso Martini,famously created for a model who wanted a drink to“wake her up and fuck her up.”SIMPLICITYOnce you have your inspiration,keep things as simple as possible,says Calabrese.“As bartenders we have come such a long way,but to create a cocktail with legacy we should not think

31、oat)and the Paper Plane in 2008(bourbon,Aperol,amaro,lemon juice).“Keep it simple,”he tells Drinks International.“You need to be appealing to both the cocktail bar bartender and the home bartender.Any ingredient that uses super-complicated preparations,while it might be delicious,it will not have re
32、plicating power,”Ross adds.”“If you want your drink to be made and shared,keep the ingredients to relatively accessible products and your extra syrup prep,lets say,ef cient,”he adds.“Were all looking for a quick f x,lets get these drinks up to their lips as easy as possible.Also,Quick Fix is a great
33、 cocktail name.Isnt it?And thats not a feature to be overlooked.Dont make a delicious drink with an ugly name.And let it be said in one to three words(the average in our list of the bestselling classics averages at 1.7 words per name-only six of the 50 are three words).Also,make it catchy or curious
34、.Would the Hanky Panky named at T e Savoy af er its recipient exclaimed:“T ats the real hanky panky”have got as far without its name?T e Pornstar Martini certainly wouldnt have.A good name should speak to the inspiration,the story,or the ingredients.TWISTSDont be afraid of the judicious twist a lot
35、of the leg work has been done for you.“T e vast majority of new classics,and I say this while struggling to think of outliers,have recipes that are incredibly close to much older cocktails,”says Satans Whiskers Kevin Armstrong,creator of the London favourite East 8 T e vast majority of new classics

37、bout taking away.Just look at the Tommys Margarita;by swapping agave syrup for orange liqueur and insisting on 100%agave tequila it refocuses the Margarita,somehow making it seem more authentic and a better vehicle for the spirit.“T e goal was to make a Margarita that tastes of the tequila you,the b
38、artender,chooses to use,”Julio Bermejo tells us.CAPTURING THE ZEITGEISTYou have your inspiration,your ever-so-simple,tasty recipe,but is it the right time?“You need zeitgeist,”says Joerg Meyer,inventor of the Gin Basil Smash.“Gin was a good choice in 2008,”he says.Calabrese agrees pointing to the Ma
39、rtini craze in the 90s.“Martinis were maybe the f rst classics to be twisted we picked up on the iconic name and changed its face.”And,of course,the Tommys caught on against the context of the 100%agave tequila movement something its creator was also the pioneer of.Bea Bradsell,too,points to broader
40、 trends for the lif -of of her fathers Espresso Martini.“T e initial popularity of the drink I credit to Australian third wave cof ee culture,”she says.“T is passion for cof ee added new dimensions to the cocktail,putting as much focus on the chosen cof ee as the spirit.”And so,if its wise to head d

43、petitions such as Bacardi Legacy are also a breeding ground for neo classics:Tom Walkers Maid in Cuba,Ago Perrones Mulata Daisy and Ronnaporn Kanivichaporns Pink Me Up are probably among the best known of them.And while these competitions of er an incredible platform,a year in the spotlight is not n
44、ecessarily enough to gain lasting traction.An aspiring classic needs a place to call home.So,f rst things f rst your cocktail needs to be on your bars menu.As Meyer says,“see how your guests react”to your list and“notice when a drink is going down well”you dont get to decide which drink is popular.O
45、nce its established what cocktail has traction,it has to stay on the menu.Ago Perrone keeps the Mulata Daisy in Connaught Bars Masterpieces section a best of the best over the bars lifespan.T is in-house classic section is a no-brainer,but even if your menu is a daily or weekly list,theres no harm i
46、n making a drink a more permanent resident.T is idea of going to a bar for a certain drink is as old as the bartending profession.Just to name a few former worlds best bars:PDT and the Bentons Old Fashioned;Dead Rabbit and the Irish Cof ee;Dandelyan and the Koji Hardshake.But what if youre a bartend
47、er who moves bars?Sometimes a signature with traction stays with the bar think Champagne Pia Colada at Coupette but you need to consider taking your drinks with you.T e Penicillin and Paper Planes spiritual home is now Attaboy,following its creator Sam Ross.T e East 8 Hold-Up was invented at Milk&Ho
48、ney London,but its current residence is Satans Whiskers.Notice too that when Calabrese opens a bar,he always has his Breakfast Martini and Spicy Fif y in tow.PERSEVERANCEPerseverance is everything.Likely,just as youre bored of making your cocktail,the opportunity is starting to emerge for it to catc
49、h on.“Do you have the belief to keep promoting and mixing it year on year?”asks Meyer.“Do you have the courage to leave it on the menu?Are you able to be classic yourself and not chase every trend can your ego tolerate not always creating new drinks?Do you take advantage of every opportunity to spre
50、ad the word,do you answer journalists emails,and do you have photos ready?Are you willing to communicate on all your channels about one drink,not about your creativity?And most importantly:will you do all this when no one is asking you to?T e recipe should be simple,but the rest wont be.”No bartende

52、 to not get distracted by all the industry noise,”she tells Drinks International.“Its always been my belief that once you shif the focus to the bigger picture mastering the craf and continually striving for excellence the legacy drinks will come in a more organic and enduring way.”NETWORKIn the past
53、,operating a famous bar in a well-connected city was key New York has great bars and bartenders but also the media infrastructure and the audience to amplify its creations.But be it through traditional media,social channels,or community relationships,you need a network.“Before I mixed the f rst Gin
54、Basil Smash in 2008,I had already invested my 10,000 hours,”says Meyer,“or certainly 25,000,visiting bars and bar shows.I also created the most-read German cocktail blog with Stephan Berg.I built up a network and made myself and my Le Lion Bar de Paris better known.And none of this because I wanted
55、to create a classic,but because I was and am obsessed with bars and cocktails.What do you think makes a cocktail world famous?T e taste?No,you need to build a network.T e fascinating thing about it is,for the f rst year you dont even notice that the journey of your classic has already started.”Well

59、i,with its divisive bitterness,prevails.Unapologetically bold,but with depth and complexity,its an undisputed classic,and easy to reproduce too,with its equal-parts combination of gin,sweet vermouth and Campari.While its exact history is contested,the Negroni isnt without pedigree.Its a descendent o
60、f the Americano sweet vermouth and Campari lengthened with soda water and the Milano Torino before it,which omits the soda water.T e most common Negroni origin story tells of an eponymous Italian count walking into a bar and ordering an Americano,but boozier.T e obliging bartender drops the soda,add
61、s some gin,and the rest is history,or at least one version of it.T e bartender,the story goes,was Fosco Scarselli at Caf Casoni in Florence,sometime around 1919.Itself a twist on a classic,the Negroni has proven particularly adaptable over the years,with bartenders swapping out any and all of its tr
62、io of ingredients to create new drinks.Among the most revolutionary is the White Negroni in all its forms,but youll f nd a near-endless array of Tequila Negronis,Mezcal Negronis,Rum Negronis,and so on.One noteworthy variant,created in the 1970s and further popularised via TikTok in recent times,is a

65、haps unsurprising given the ubiquitousness of this tequila-based classic.At its heart,however,this is a beautifully simple classic,much like the pre-Prohibition drink that likely inspired it,the Daisy,a combination of spirit,lime juice and orange liqueur or grenadine.T e tequila version became known
66、 by the Spanish word for daisy,margarita,which in turn became a byword for sunshine and good times the world over.Nowadays its the more ref ned takes on the Margarita that are on the rise,with the Tommys re-entering the top 50 this year,and the Mezcal Margarita returning last year.Soho House,meanwhi
67、le,has added a trendy version of its own in recent times,the spicy Picante de la Casa,or Picante to its friends now the most-ordered cocktail at the groups bars.THERE WAS A time,back in the mid-to-late 1800s,when the art of the cocktail was becoming altogether too fancy for some peoples tastes.T e u
68、ncomplicated beverages made to that earliest cocktail specif cation of spirit,sugar,water and bitters were starting to include such garish ingredients as maraschino liqueur or,heaven forbid,absinthe.As if in protest,these cocktail conservatives demanded their drinks be made the old-fashioned way,and
69、 the practice has continued.T is is,by def nition,an unfussy drink,so its only f tting that one of the best modern takes is similarly unpretentious.T e Oaxacan Old Fashioned,attributed to New York bartender Phil Ward,circa 2007,revisits each ingredient in turn,giving each a Mexican twist.Whiskey bec

72、 Report 2024 15 4.ESPRESSO MARTINIJUST ONE OF many enduring gif s to the world of cocktails by the late,great Dick Bradsell,the Espresso Martini is certainly the most prevalent of his creations at the moment.Famously,Bradsell created the earliest version in the 80s,at the Soho Brasserie on Old Compt
73、on Street in London,in response to a request from a young lady for“something thats gonna wake me up,then fuck me up”.T e Espresso Martini certainly does all that,and more,as a deceptively simple classic thats also become an excellent template for countless variations.T e recent increase in its popul
74、arity is also responsible,at least in part,for todays vibrant cof ee liqueur category,which has arguably led to better modern-day versions of the classic.Meanwhile,theres another cof ee cocktail in town,or rather on this list.Increasingly found on cocktail menus recently is the Carajillo,a new entry
75、 this year at 38.5.DAIQUIRIA VENERABLE CLASSIC such as the Daiquiri cant be expected to have made it to the 21st century with the precise story of its origins intact or without some questionable,brightly-coloured incarnations along the way,for that matter.While theories abound,dating the Daiquiri at
76、 least as far back as the late 1800s,the details are likely lost to the mists of time.What we do know is,done right,theres nothing quite like this seemingly-simple combination of rum,lime and sugar.Its no wonder that the best variations,like the Hemingway Daiquiri,have become classics themselves.Aud
77、rey Saunders Old Cuban is a recent example,from the mid-2000s,which introduces mint and champagne,while Kevin Armstrongs Dry Daiquiri,from a similar time period,adds Campari and passion fruit syrup.Both are a testament to the legacy of the cocktail that inspired them,and are marvellous drinks in the

80、 or Martinez wouldve had sweet vermouth in their glasses rather than dry,and the spirit was likely Old Tom gin,not London Dry.A delightful drink,certainly,but a far cry from the masterclass in elegance and simplicity that is the Dry Martini we know and love.Skipping the so-called Martinis of the 80s
81、,there are countless drinks that subtly adapt the fundamentals of the Dry Martini to great ef ect,both new and old.A recent case in point is the Glacier Martini from London bar Viajante87,with measured touches of grape and plum,served exceptionally cold,with a smoked olive an inventive yet considere
82、d take on the classic.THERE WERE ONCE many Sours,and indeed there still are,but none are so widely adored and enduring as the Whiskey Sour.Whats particularly remarkable is how little this classic essentially a combination of whiskey,sugar and lemon juice has changed over its long history.Egg white m
83、ight have become a commonplace addition over the years,and the whiskey might taste a little dif erent,but todays versions are mostly faithful to the drink that was being made in the mid-1800s.T ats not to say that the Whiskey Sour is without its share of rif s.For renowned contemporary takes,we need
